Baked Blueberry Pecan Oatmeal
Baked Blueberry Pecan Oatmeal

350° preheated oven
Servings: 6
In a 2 quart baking dish, buttered, mix together:
- 2 cups old fashioned oatmeal (not instant)
- 2⁄3 cup brown sugar
- 1 tsp. baking powder
- 2 1⁄2 tsp. Captain’s Coffee Dust
- 1⁄2 tsp. salt
Mix together:
- 2 eggs
- 1 2⁄3 cup milk
- 1 tsp. vanilla extract
Add to oatmeal mixture, along with 2 T melted butter
Scatter 2 cups blueberries in bottom of prepared baking dish. Pour the oatmeal mixture over that.
Sprinkle a few blueberries on top and bake, uncovered 45-55 minutes.
Let cool for 5 minutes and serve warm with milk or lightly sweetened Greek yogurt.
Or, when cooled, cut into 6 portions and freeze.
